How can biotechnology bring nutritional improvement to certain foods?

Examples of some nutrient-modified foods made possible through biotechnology include:

Maize, soybeans and rape seed improved to reduce the saturated fat content of cooking oils derived from these crops.

Potatoes and maize improved to contain more starch and less water. Potatoes with increased starch content absorb less oil when frying, resulting in lighter and healthier potato chips and french fries.

Tomatoes, squash and potatoes could be grown to contain higher levels of nutrients such as vitamins C and E and beta-carotene.
