What is the meaning of raw vegetables for our health?

Raw vegetables have a lot of different vitamins, minerals, phytochemicals and are good sources of dietary fibre. Dietary fibre stimulates digestion. It tends to increase faecal bulking due to increased water retention and reduces transit time. Epidemiological evidence suggests that low faecal weights are associated with an increased risk of cancer of the colon. Dietary fibre may also bind toxins, bile acids and carcinogens.
But our body can often absorb more of an important substance from cooked vegetables than from raw ones. Cooking can improve the performance of carrots, broccoli and spinach, when it comes to protecting health. However, it doesn’t matter how you eat vegetables until you are eating enough of them in the first place.
