Why focus on food biotechnology these days?

Yesterday, food technology aimed at preserving food to keep it as wholesome as possible and free from contamination. Today, food technology seeks convenience, nutritive quality, and environmental protection. The goals have changed: consumers expect food to be varied, sophisticated, in individual portions, and ready to eat. To satisfy those needs all elements of the food chain are involved: research, harvest, preparation, processing, packaging and retail distribution to the consumer. Biotechnology adds to that improved and better protected food products, and will be able, in the future, to create entirely new products. European consumers wish to be informed on these developments now that such products are coming to the market and regulations for these novel foods are being issued at European and national levels.
