Why should I eat fruit and vegetables? How many portions should I eat per day?
Whether fresh, tinned or frozen, fruit and vegetables are virtually the only source of vitamin C for the human organism. They also provide vitamins of the B group, beta-carotene (provitamin A) (which could explain why they protect against cardiovascular diseases and certain forms of cancer), an appreciable quantity of minerals and trace elements (potassium, magnesium, calcium, iron, copper etc…) and polyphenols. They are also rich in fibre which optimises bowel movement. Public-health bodies generally recommend eating at least 5 fruits or vegetables each day.
